Ingredients

  • Coconut oil spray
  • 2 cups oat or barley flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 teaspoons dried onion flakes
  • 2 teaspoons garlic powder
  • 1½ teaspoons dried dill
  • ½ teaspoon freshly ground black pepper
  • 1½ cups buttermilk
  • 1 egg
  • ½ cup coconut oil
  • ⅓ cup chopped scallions
  • ¼ cup cilantro
  • 1 cup pumpkin seeds

Instructions

Step 1

Preheat your oven to 400°F.

Grease a muffin tin generously with coconut oil spray.

In a medium bowl, combine oat or barley flour, baking powder, baking soda, salt, onion flakes, garlic powder, dill, and black pepper.
